Oatmeal Cranberry White Chocolate Cookies

Plus, they can be done in 30 minutes. Not only is this recipe super easy to make, but also very healthy considering our choice of ingredients.

These cookies are one of the healthiest. For anyone who is gluten sensitive or intolerant, these cookies call for gluten free flour but taste just as delicious as the “real thing”.

The monk fruit sweetener contains several compounds extracted to make a natural sweetener that is around 300 times sweeter than cane sugar. It has no calories and doesn't affect blood sugar levels, so this may be the sweetener you've been looking for.

How to MakE OATMEAL CRANBERRY WHITE CHOCOLATE COOKIES.

To make these super delicious oatmeal cranberry white chocolate cookies, I start by heating my oven to 350 degrees Fahrenheit. Into a mixing bowl, I crack open two eggs and sugars and beat until creamy. Next, I mix well with my sieved flour, baking soda, cinnamon, and salt.

I add my oats, craisins, and chocolate chips into the mixture and mix well. Next, I drop the dough using a rounded tablespoon on an ungreased cookie sheet and bake for ten minutes or until they turn light golden brown.

Lastly, I take out my freshly baked mouth-watering cookies and cool them for one minute on cookie sheets before they further cool on wire racks. Viola! We’ve made about three dozen cookies. 

OATMEAL CRANBERRY WHITE CHOCOLATE COOKIES TIPS AND TRICKS.

  • Use eggs at room temperature. That will make the whites and yolks mix more evenly in the dough. Getting eggs at room temperature is easy. Just place them in a bowl of warm water for 5 minutes.

  • Ensure the butter and sugars are well-beaten. Beat them until they form a soft cream. So the sugar crystals will help aerate the butter by creating air bubbles. If we beat them for about 10 minutes, we will get fluffy cookies when we bake them.

OATMEAL CRANBERRY WHITE CHOCOLATE COOKIES

Ingredients

  • 2 eggs

  • 1/2 tsp salt

  • 1 cup craisins

  • 1 tsp cinnamon

  • 1 tsp vanilla paste

  • 1 tsp baking powder

  • 1 1/2 c gluten-free flour

  • 2 3/4 cups old-fashioned oats

  • 1/2 c monk fruit sweetener

  • 3/4 c firmly packed brown sugar

  • 1 cup mini white chocolate chips

  • 2 sticks unsalted butter softened

Instructions

  • Heat your oven to 350 degrees Fahrenheit

  • Beat butter and sugars until it becomes creamy. Remember, most people do not beat their butter and sugar long enough!

  • Add your eggs and vanilla paste, and beat for 1 minute.

  • Add baking soda, flour, cinnamon, and salt and beat for 1 minute

  • Add oats, craisins, and chocolate chips

  • Mix slowly until combined, do not over beat/mix

  • Drop dough using a rounded tablespoon or cookie scoop on an ungreased cookie sheet. You can also line with parchment paper for easier cleanup.

  • Bake 10 min or until light golden brown

  • Cool for 1 minute on cookie sheets

  • Finish cooling on wire racks

  • Makes about 3 dozen cookies
