One Pot Chicken Mushroom Orzo
Creamy orzo screams fall to me. We love this pasta because you can cook it directly in the pan versus boiling a pot of water (hello, less dishes). This recipe also includes some of the juiciest chicken thighs ever. For a one pot meal ready in under an hour, this recipe is a total winner.
We think the mushrooms make the dish, but of course - itβs still delicious without them if you are not a mushroom fan.

How to Make ONE POT CHICKEN MUSHROOM ORZO :
Start by seasoning your chicken with salt, pepper, and paprika - each side. You can be generous! Then melt 1/2 the butter in skillet and cook chicken over medium heat until golden brown and cooked through about 5 minutes per side.
Remove chicken from pan to rest. Add remaining butter and cook mushrooms, onions, garlic until tender about 5 minutes. Add in fresh thyme. You want to the mushrooms to release their water and begin to brown before you add in your chicken stock.
Then add in your chicken stock and dijon mustard, scraping any brown bits off bottom of the skillet. Bring to boil. Add in orzo pasta.
Reduce heat and cook until pasta is cooked through about 6-7 minutes. Add in more chicken stock if needed. Then stir in spinach, Parmesan, heavy cream. Cook until spinach is wilted about 3 minutes. Season with salt and pepper to taste
Add chicken back into skillet, warm through, and then remove from heat. Garnish with burrata, tomatoes, fresh basil, olive oil, and fresh ground black pepper. Enjoy!

Donβt add your stock too soon: You want to the mushrooms to release their water and begin to brown before you add in your chicken stock
Try other greens or garnishes: This recipe is so versatile you could switch out the spinach for an arugula or kale. You can also try different garnishes like switching out the burrata for feta.

Ingredients
1 1/2 lb boneless, skinless, chicken thighs
Kosher salt to taste
Fresh ground black pepper to taste
2 tsp Paprika
4 tbsp salted butter
1 tsp fresh thyme
1/2 lb Baby bella or Cremini mushrooms (about 10 mushrooms)
3 cloves garlic, minced
1/2 white onion sliced
2-3 cups chicken stock
2 tsp Dijon mustard
1/4 c freshly grated parmesan cheese
1 cup Orzo pasta or about half a box
4 handfuls baby spinach
1/2 cup heavy cream
About 5 cherry tomatoes for garnish (optional)
Fresh basil leaves for garnish (optional)
Fresh burrata cheese (optional)
