Spinach Avocado Pasta

 

The creamy paste of avocado and spinach is a divine recipe that is easy to prepare and will satisfy everyone. Avocado and spinach are healthy foods, rich in vitamins and protein. Best of all, the ingredients of this preparation combine perfectly.

Why do avocados appear in almost every photo of veggie dish on Instagram? Well, because they are full of healthy fats and treasure endless benefits for our body: they control blood pressure (so they are good for the heart).

They also keep cholesterol at bay, contain anti-inflammatory properties, regulate blood sugar levels, increase the absorption of nutrients, and take care of the skin among other properties according to the American Institute for Cancer Research.

How to Make SPINACH AVOCADO PASTA.

I first cook the pasta in plenty of boiling water and a pinch of salt. I usually follow the instructions shown by the manufacturer on the package. After that, I remove the pasta pot from the heat, drain it in a strainer and set it aside.

In the glass of the blender, I add garlic cloves, 1 tablespoon kosher salt, lime juice, 1 tablespoon chopped fresh cilantro, and 2 handfuls of spinach into the mixer containing the mashed avocados and process until all the ingredients are fully integrated and have formed a sauce. Be sure to taste test as avocado sizes vary and everyone’s salt preferences are different.

Lastly, I heat a pot over medium-low heat and add the pasta and the sauce. I then stir well for a couple of minutes until well combined, and my spinach avocado pasta is ready to be devoured. I like to serve immediately while still hot and fresh.

We topped with olive oil, pine nuts, red chili flakes, and cherry tomatoes - but all of this is optional. Other times we have made this dish I simply topped with some freshly grated parmesan cheese.

sPINACH AVOCADO PASTA Recipe tips & tricks

  • Cook pasta in plenty of water. The pasta should always be cooked in plenty of salt water; one liter of water per 100 grams of pasta is generally calculated. The fact that there is a good amount of water will allow them not to stick to each other, and we can enjoy a well-hydrated paste.

  • If you are not dairy free. Try adding a splash of heavy cream, or parmesan to the sauce mixture in the pot for a cheesy addition.

sPINACH AVOCADO PASTA

This spinach avocado pasta recipe is mouth-watering. You should try them!

Ingredients

  • A pack of pasta of choice, can also use gluten free

  • 2 large avocados

  • 2 handful fresh spinach - about 2-2.5 cups

  • 2-3 cloves garlic

  • 1 cup cottage cheese

  • 1 tablespoon kosher salt

  • Juice from 1 large lime or 2 small limes

  • 1 tablespoon fresh cilantro – chopped

  • 1 cup water or vegetable stock

  • Optional garnish: olive oil, pine nuts, red chili flakes, cherry tomatoes, goat cheese

Instructions

  • Cook the pasta according to the package directions.

  • Into a glass mixer, add peeled avocados.

  • Add garlic cloves, 1 tablespoon kosher salt, lime juice, 1 tablespoon chopped fresh cilantro, and 2 handfuls of spinach into the mixer containing the mashed avocados and process until well combined.

  • Add 1 cup of water or vegetable stock to the mixed ingredients and mix until it becomes a smooth sauce.

  • Heat a pot over medium-low heat.

  • Add the pasta along with the sauce.

  • Stir well for a couple of minutes so that everything mixes well.

  • Garnish with red chili flakes, pine nuts, olive oil, and cherry tomatoes & serve immediately!

  • Serves 6-8
